3 Chicken breasts, cubed.
1 Medium onion, diced onion.
1 Red bell pepper, chopped.
3 Garlic cloves finely sliced.
1 Red Chilli, de-seeded and sliced.
2 Tbsp. tomato puree.
3 Slimming World chorizo-style sausages, sliced.
850ml. Chicken or vegetable stock.
325g Orzo pasta.
1 tin chopped tomatoes. (400g).
1 Tsp. oregano.
1 Tbsp. Smoked Paprika.
180g Fat-free crème fraiche.
Salt.
Black pepper.
25g Parmesan, grated.(optional).
Freshly chopped parsley.(optional).
Fry-Light Spray Oil.
Method:
- Bring a large (wide) pan to a medium high heat, spray with a little fry-light oil, add the onion and sliced chorizo and fry for 2-3 minutes.
- Add the diced chicken garlic, chilli, paprika, oregano and red peppers, continue to cook until the chicken is seared all over.
- Add the chopped tomatoes and tomato puree, stir through to combine then add the orzo pasta and the chicken or vegetable stock. Bring to a rolling boil, reduce the heat, cover and simmer for 20 minutes, stirring occasionally.
- Remove from the heat, add the crème fraiche, stir well to fully combine, season to tase with salt and freshly cracked black pepper.
- Serve garnished with a little parmesan and freshly chopped parsley. (optional).
